Abstract
Water molecules affect construction and destruction of inclusion crystals of a simple dipeptide (). In the presence of water, the inclusion crystals, which have a water-buried dipeptide sheet structure, are smoothly constructed from amorphous solid of . But, the sheet is thermally unstable than anhydrous one.
