  • Abstract
    This study investigated the physicochemical properties of acorns of two oak species (Quercus ithaburensis and Quercus calliprinos) growing under Mediterranean conditions. The results showed that physical dimensions and weight of acorns and acorn parts were significantly (p ≤ 0.05) larger for Q. ithaburensis than Q. calliprinos. Chemical analysis showed that various acorn parts were rich in carbohydrates (41.52 to 78.83 %) and fiber (13.11 to 51.76 %), and moderate amounts of protein (2.08 to 4.94 %), fat (0.76 to 3.08 %) and ash (1.78 to 3.21%). Mineral analysis showed that Na ranged between 141.17 and 278.17, K between 75.98 and 148.81 and P between 21.40 and 80.80 mg/100 g. The composition of acorn parts showed significant differences between the two species in carbohydrates, fiber, Na, K and P. This study showed that oak acorns are rich in some nutrients (carbohydrates, fiber, Na, K and P) and could be used as alternative ingredients of food products or livestock feed
