Abstract
ABSTRACT: Gellan is an anionic biopolymer composed of tetrasaccharideunits. Its thickening, emulsifying, suspending, stabilizing and film-forming properties as well as its ability in controllinghydration and improvingfood textures have led to developing the biopolymer’s application in pharmaceutical and food industries. The aims of this study were to investigate gellanproduction, factors influencing the biopolymer, its varioustypes, functional properties and applications.
