Abstract
In this research it was aimed to determine the microbiological, chemical and physical properties of street milk samples sold in different parts of İzmir and to compare these samples quality with milk samples produced from middle and large scale dairy farms. Mainly the microbiological differences between samples were researched, after detecting the quality of milk samples from those sources. According to results, quality of raw milk samples collected from different resources was not adequate and significant part is not met the requirements in Turkish Food Codex. The street raw milk samples of 91 % was insufficient in point of microbiological quality however, this figure declined to 50 % in samples from middle and large scale dairy farms.
