  • Abstract
    Traditional knowledge about culinary culture has been passed down through generations and has survived until today. However, there are also culinary traditions that have lost their importance over time. Stone sheet is a traditional kitchen equipment with a history of 200 years, adopted by the provinces of Bartın, Zonguldak and Kastamonu. This equipment has been used in the making of Bartın bread, pastries and dry phyllo dough from past to present. The aim of this study is to ensure the sustainability of the stone sheet, which is accepted as an equipment belonging to the culinary culture of Bartın province. The data were collected by interviewing 11 people who voluntarily participated in the women s market known as galla market in Bartın on 28.05.2021. The data were analyzed with the MAXQDA program. The results of the research show that the demand for stone sheet has decreased with the effect of urbanization in Bartın. In addition, it is seen that the importance given to this tradition has decreased. It is planned that the study will not forget the traditions that are about to disappear in the culinary culture and will contribute to the sustainability of these traditions.
