Abstract
To find a low-cost, simple and effective method of Lentinulaedodes preservation, the Lentinulaedodes were treated with common ice and ozonated ice after pretreatment and evaluated for changes of the nutrition, physiological and biochemical indexes during storage at (10 ± 0.5)°C. The results show that the best effect of preservation of Lentinulaedodes appeared to be the treatment of ozonated ice. Under this condition, the respiration rate and ethylene production of Lentinulaedodes was much inhibited. The treatment of ozonated ice can delay the Vitamin (Vc) decreasing and the polyphenol oxidase increasing at the same time. The titratable acid (TA) was also delayed.
