  • Abstract
The emission from cooking was a significant contributor to atmosphere pollution. The organic acid and PAHs in the atmosphere coming from Sichuan cooking fumes are harmful to the human health and the physical objects. Sichuan cooking fumes in this article are systematically divided into three categories. Experimental study indicated that Sichuan cooking fumes contained abundant monocarboxylic acids including C7-C12, C16 and C18. Di-C9 was the only component detected out among dicarboxylic acid which showed great difference with that from American cooling fumes. 11 PAHs were detected out and Acp, Phen, BaA and Chr were the dominant species.
