Abstract
This paper evaluates the growth of microbes in chilled beef using Artificial Neural Networks (ANN) method, which is implemented by Matlab 7.0 programming. ANN with three-layer is applied to predict the parameters of the modified Gompertz Model as a secondary model. Thus the bacterial growth curve under different packaging and storage conditions could be predicted through the learning processing of ANN. The comparison of predicting data with relative experiment data is presented, which prove the effectiveness of ANN modeling. The modeling of non-experimental data is also presented to show the future application of neural network prediction method.
