  • Abstract
    A portable infrared spectroscopy instrument based microcontroller has been designed and with help of developed algorithm for mango fruit quality assessment and characterization. This paper presents the design and development of a fruit quality grading instrument using Bio-optic sensor. The experiments were conducted to obtain the results from the developed instrument and the observed results were correlated according to the measured output of the Bio-optic sensor. In the experiment, a large number of mango fruit samples have been monitored for period time of six days to study the correlation between fruit ripening process versus time period. The obtained result measured by the developed instrument was in the range of 3.5 V to 4.2 V for unripe mango fruit and the ripest one. The rate of quality increase was calculated as an average of 6.7 mV per day.
