Abstract :
The kinetics of water absorption of firik, dövme and wheat was studied at 20°C, 30°C, 50°C and 70°C using Pelegʹs equation. The equation was capable of predicting water uptake of the three cereals. The Pelegʹs constants K1 and K2 were affected by temperature. The temperature dependence of 1/K1 followed an Arrhenius-type relationship. The activation energy was in the range of 9696–24 288 kJ/kg mol.
