Abstract :
Seven lactic acid bacteria (LAB) namely, Pediococcus acidilactici NCIM 2292, P. pentosaceous NCIM 2296 and Streptococcus thermophilus NCIM 2412, Lactobacillus plantarum NCIM 2085, Lactobacillus acidophilus NCIM 2287, Lactobacillus helveticus NCIM 2126 and Lactococcus lactis NCIM 2114 were procured from National Chemical Laboratory, Pune. Their cells and bacteriocin like inhibitory substances (BLIS) were tested against various seafood-borne bacterial isolates. Clostridium perfringens was inhibited by P. acidilactici on 36 h of storage by 3.90 log difference similarly Staphylococcus aureus was inhibited by S. thermophilus on 36 h of storage by 3.95 log reduction. Listeria monocytogenes was inhibited by P. pentosaceous on 36 h of storage by 2.95 log difference in the MRS broth as compared to control. Cl. perfringens was inhibited by Lb. acidophilus on 48 h of storage by 5.17 log reduction in MRS broth. L. monocytogenes was inhibited by Lc. lactis on 36 h of storage by 3.60 log difference whereas Bacillus cereus on 48 h of storage. B. cereus was also inhibited by Lb. helveticus on 36 h of storage by 3.0 log reduction. Complete inhibition was observed on Gram-positive bacteria but on Gram-negative bacteria the inhibition was very less.
