Abstract
The properties of thin liquid films and foams of lysozyme/C10DMPO and lysozyme/SDS have been studied on the basis of their adsorption isotherms. The adsorption of mixed protein/surfactant solution at the air/water interface has a competitive nature and a gradual displacement of the protein from the interface is observed with increasing surfactant concentration. For this study three different surfactant concentrations of each type (non-ionic C10DMPO and ionic SDS) have been chosen corresponding to a protein-like, mixed and surfactant-like adsorption layer. The addition of surfactant to the protein solution has a stabilizing impact on the foam properties.
