Abstract :
Phospholipid classes and fatty acid compositions in the egg of the squid Sthenoteuthis oualaniensis were assessed. The total lipids content was 6.2±0.4% (w/w). Phospholipids were 72.0±3.2% of total lipids (w/w). A high-performance liquid chromatography/evaporate light-scattering detector (HPLC-ELSD) analysis was carried to determine the classes and the quantities of the phospholipids. The result showed that the major phospholipid was phosphatidylcholine (PC, 67.50±0.55% of total phospholipids, w/w). Docosahexaenoic acid (22:6n-3) was rich in the phospholipids fraction (33.3±1.6 mol%) and in phosphatidylcholine (40.0±0.4 mol%).
