Abstract :
In the past year, studies of amorphous biological materials have shown that small molecules, including water, may have a high mobility in their glassy structure. In addition to the well-known effects of temperature and water, new information has been gained on how the effect of the glass transition contributes to time-dependent transformations, structural transformations and rates of chemical and enzymatic changes.
