Abstract: The efficiency of the solid-phase microextraction (SPME) method to analyze durian (Durio zibethinus) volatile compounds was investigated. In the present work, isolation of volatile flavour compounds from durian variety D24 was performed using three types of SPME fibers that included 85 ¡dm polyacrylate (PA), 65 µm polydimethylsiloxane/divinylbenzene (PDMS/DVB), and 50/30 ¡im divinylbenzene/ carboxen on polymethylsiloxane (CAR/DVB/PDMS). Identification of volatile compounds was carried out by gas chromatography-mass spectrometry (GC-MS). The results revealed that the CAR/DVB/PDMS fiber was the most sensitive and least selective among the three fibers studied. More than 40 volatile compounds with mainly esters, thiols, and disulphides were identified in the headspace of fresh pulp from D. zibethinus var D24 using this fiber.
