Abstract :
Controlling the temperature inside package is important for ensuring the quality, as well as the shelf life of the fresh fruits in the modified atmosphere package (MAP). In this paper, a kinetic model for predicting the temperature in MAP was developed. The model was based on system of differential equations of respiration heat (a Michaelis-Menten type equation), energy balances and gases transport phenomena across the package. The system equations were solved numerically using 4th-order Runge-Kutta method. The applicability of the model to in predicting temperature of MAP containing Hung Yen Longan was successfully verified with the experiment data for various types of packaging film.
