Abstract :
The study deals in separation of some organic contents in Dates such as carbohydrates, vitamins and amino acids by using HPLC technique.This study aims at creating selective, simple and rapid chromatographic methods for the determination of carbohydrates in Dates with selective condition and good chromatographic separation.From the literature it appears that the Dates are very important source of food as it is rich in carbohydrates,vitamins, amino acids and minerals e.g. Potassium (K).

تهدف هذه الدراسة إلى فصل بعض المكونات العضوية للتمور مثل الكربوهيدرات باستخدام الكروماتوجرافيا السائلة ذات الضغط العالي.
كما تهدف أيضا إلى استنباط طرق كروماتوجرافية بسيطة و سريعة و انتقائية و تعطي فصل واضح و صحيح لتقدير الكربوهيدرات في بعض أنواع التمور بالمملكة العربية السعودية.
وقد عرف من خلال الدراسات السابقة أن التمور تعتبر من المنتجات الغذائية الهامة نظرا لما تحتويه من عناصر غذائية ضرورية مثل الكربوهيدرات و الفيتامينات و الحموض الأمينية و المعادن مثل البوتاسيوم
