Abstract :
The concentration of major and trace elements for Solanum tuberosum L. and Zingiber officinale L. tubers samples, collected from fruit market Swat, Pakistan were analyzed for Na, K, Ca, Mg, Cu, Fe, Mn, Co, Cd and Zn by Atomic absorption spectrophotometer. The concentration of sodium in S. tuberosum L. with skin was 11.23 mg/L and without skin 10.22 mg/L and in Z. officinale L. with skin was 13.12 mg/L and without skin was 8.412 mg/L Potassium in S. tuberosum L. with skin was 12.55 mg/L and without skin was 9.852 mg/L and Z. officinale L. with skin was found as 10.41 mg/L and without skin was 9.423 mg/L The concentration of calcium in S. tuberosum L. with skin was 13.41 mg/L and without skin was 7.41 mg/L and Z. officinale L. with skin was 8.241 and without skin 5 .231 mg/L Magnesium in the samples of S. tuberosum L. with skin was found as 9.524 mg/L and without skin was 5.231mg/L and in Z. officinale L. with skin was 4.213 mg/L and without skin 3 3 mg/L Iron in S. tuberosum L. with skin was determined as 6.5 mg/L and without skin was 4.231 mg/L and in Z officinale L. with skin was 0.452 mg/L and without skin was 0.52 mg/L Trace elements like copper, zinc, cadmium, lead, manganese, chromium and cobalt were found in trace quantities. However it fulfils the dietary requirements of the consumers.
