Abstract :
This article examines problem of subsistence of Istanbul during and after the World War I. It is about a cookbook -consisting of twenty four page- that was written in these years. The name of this book is “The Meatless and Oil Free Cookbook”. This book is located in the database Turkish Religious Foundation Centre Library for Islamic Studies. This book makes us feel the need to be frugal. and it is claiming that meatless and fat free meals can be delicious. Because people were unable to obtain these expensive products. Accordingly this book was to bring different alternatives to expensive materials. This approach is enlightening in the field of gastronomy.
