Abstract
In this study, Its were investigated the moisture, ash, carbohydrates, crude protein, fat and fatty acids (saturated and unsaturated) and minerals (macro and micro elements, heavy metals) compounds of buckwheat grown in Konya ecological conditions. According to our analysis moisture, ash, carbohydrates, crude protein and fat 9.47, 2.12, 74.58, 11.20 and 2.63 respectively. Saturated and unsaturated fatty acids of 20.18% and 76.37% respectively. Saturated fatty acids palmitic acid is the highest (15.87%), while polyunsaturated fatty acids oleic acid (39.73%) were determined. Some of macro, micro and heavy metals, nitrogen (% N), phosphorus (P), iron (Fe), zinc (Zn), lead (Pb) and chromium (Cr) ppm, respectively 1.79 %, 3666.70, 87.94, 22.29, 3.18 and 0.47 respectively.
