Abstract :
Afyon Kaymak is the milk product boiled and cooled in accordance with the technique. According to communiqué, quality and standards, Afyon Kaymak must be produced using buffalo milk. Cow milk and/or cow milk’s mixture is used to production of Afyon Kaymak due to reduced buffalo milk. For this purpose, in this study, buffalo and cow milk species are determined at Kaymak in Afyonkarahisar province. It was analyzed 100 Afyon Kaymak samples. DNA extractions of samples are made with Axygen Multisource DNA Isolation Kit according to manufacturer s instructions. After PCR processing made with Applied Via 7, control peaks (with VIC-TAMRA dye) and peak of samples (with FAM-TAMRA dye) are analyzed. As a result, 13% buffalo milk, 28% buffalo and cow milk mix, and 59% cow milk were determined at Afyon Kaymak samples. Buffalo milk has to be used in production for kaymak’s traditional properties and Standard, breeding buffalo and production of buffalo milk should be further encouraged and be suggested using of specific equipment in processing plant and use of specific equipment is recommended in processing plant.
