Abstract :
The characterization of 23 natural honeys produced in Al-Qassim region, Saudi Arabia, was carried out on the basis of eithertheir physicochemical properties: moisture, total sugars, pH, totalacidity, ash and protein contents, colour and pollen grains or theirantimicrobial activity against osmophilic microorganisms. The resultsshowed that the moisture ranged from 13.0-16.8; total sugars, 56.3-85.5; pH, 3.51-5.27; total acidity, 9.12-93.02; ash, 0.001-10.11; andcolour, light amber-dark amber. Also, these honeys are extremely richin protein content and pollen grains. The results showed antimicrobialactivities of some analyzed samples against Penicillium sp., Aspergillusnigr and Saccharomyces sp. as osmophilic microorganisms
