Abstract :
The results of the investigation on the dynamics of solar-convective drying of vegetables are presented. The variation regularities of key similitude criteria, Bi, Bim, Fo, Fom, Ki, Kim, Lu, Ko, and Rb, which determine the internal heat and moisture transfer in drying processes in solar driers and on open-air grounds, are found.
