Abstract :
ABSTRACT: Almond is one of the most valuable nuts in the world, which its kernel is subjected to rancidity by auto oxidation during long storage. In this project, we aimed to determine the best storage conditions for almond kernels. For this purpose, three kinds of almonds (hard, semi hard and soft shell almonds) were packed in five different packaging materials including transparent BOPP, semi transparent BOPP, metalizes BOPP, PA-PE-PE-PA laminate and PA-PE-PA-foil laminate either in natural atmosphere or under vacuum. Then samples were stored for 20 months at room temperature. Peroxide value and acidity of the oil extracted from samples were determined after 10 and 20 months of storage. Statistical analysis showed that the effect of all treatments on the studied properties were significant at the statistical level of 1%. Based on the results, the best packaging material and packaging conditions for the storage of almond kernels were PA-PE-PE-PA laminate and vacuum conditions, respectively. In addition, the quality loss of the kernels of soft shell almonds was less than that of the other kinds.
