Abstract :
The milk cake is an indigenous concentrated Indian dairy product, was packed in aluminium foil with LDPE laminates, craft paper with LDPE laminate, wax coated paper and polypropylene bag, sealed with electric sealing machine and stored at ambient (27oC) and refrigerated (5oC) temperature. Control sample was unpacked and kept in both temperatures. Packed as well as unpacked samples were studied for SPC, coliform count and yeast & mold count of milk cake. With respect to packaging materials employed and the studied related to microbiological analysis it is concluded that the milk cake packed in aluminium foil with LDPE laminates observed (A1) best for long term preservation. The product was good and remained safe for consumption for almost 21 days at refrigerated and for 14 days at ambient temperature.
