Fate of food-borne pathogens on modified-atmosphere packaged meat and fish

The fate of several food-borne pathogens on modified-atmosphere-packaged (MAP) meat and fish has been examined. In no instance was growth of the pathogen in MAP greater than that in the appropriate control.
