Abstract :
Gram-negative rods were isolated from spoiled strawberry-flavored bottled mineral water, with flocks as a visual defect. This defect was the result of microbial growth and flocculation. The spoilage bacterial strains were difficult to identify employing the API 20NE and API 20E tests, however molecular identification through PCR amplification of a partial region of the 16S rRNA gene allowed classification of these bacteria as Asaia lannensis. On account of the fact that the same bacteria were isolated from natural strawberry flavor concentrate used for production of flavor bottled mineral water, so we can concluded that this component could be the source of contamination of final product.
