Curcumin is valued as a functional food source in the food industry because of its wide-ranging biological and pharmacological properties, including anti-oxidant, anti-inflammatory, anti-bacterial, anti-viral [1].Several methods have been proposed to determine the concentration of curcumin and its derivatives such as Ultraviolet–visible spectroscopy (UV–Vis), ultra performance liquid chromatography and high performance liquid chromatography coupled to a mass spectrometer. Although each one presents its advantages, UV–Vis is often used to the curcumin determination on most encapsulation systems since it is fast enough and can give reliable results [2]. In this work, we present a simple, novel and rapid of analytical method for determination of curcumin in food samples using a magnetic lipid nanoparticles technique combined with UV-Vis spectrophotometry.Magnetic lipid nanoparticles were first synthesized by fabricating oleic acid (OA) on the surface of Fe3O4 (Mag), then, Mag-OA and tween80 were used as lipid and surfactant, respectively [3]. Volume of eluent solvent, pH and amount of sorbent influence on response were investigated using central composite design (CCD).Good recoveries 88.35% were obtained with the limits of detection and quantification of 1.31 and 4.18 μg/mL, respectively.
