The ester of caffeic acid and 3,4-dihydroxyphenyllactic acid is rosmarinic acid (RA) [1]. RA has been reported as highest phenolic acid from Salvia genus [2, 3]. A broad range of biological activities have been reported for RA. Biological activities are anti-inflammatory, antioxidative, antimutagen, antibacterial and antiviral [4, 5]. In this study, RA extraction by ultrasonic from Salvia atropatana was optimized. Methanol/water ratio, plant to solvent ratio and extraction time were identified as effective extraction factors. Surface response methodology was selected for experimental design. After extraction process of suggested experiment, RA content of extracts was determined by HPLC as response of experimental design. Analysis of response in surface response methodology produced a model to predict experimental results of response in optimum conditions.
