The Salvia genus is rich in phenolic compounds with high antioxidant activity [1, 2]. Antioxidant active compounds such as caffeic acid, rosmarinic acid derivatives and carnosol derivatives have been reported from Salvia genus[3, 4]. The amount of compounds could be changed by extraction conditions and therefore, optimization step is essential to provide high yield of extracted compounds. In this study, ultrasonic assisted extraction of phenolic compounds from Salvia atropatana was optimized by response surface methodology. The antioxidant activity of extract was determined as response for method development. Extraction time, temperature and plant/solvent ratio were selected as extraction factors. Antioxidant activity of extract was analyzed by DPPH radical scavenging assay. Obtained results from assay, introduced to obtain a model from response surface methodology. Resulted method could predict experimental results and produced high antioxidant activity in optimum conditions.
