Preparing an adequate and safe food has been and is a major concern universally. Undoubtedly, unsafe food is the most reasonable factor for having inadequate food. Food contaminants because of capability in impairment of health are considered undesirable substances. They can occur naturally in the environment and in the processing of raw materials into food products or can be released into the environment through human activity and thereby enter the food chain. In this review paper, we will discuss both about natural contaminants and those enter to the food chain by humans. During the last decade, our team focused on detection, determination, degradation of naturally occurring toxins mainly mycotoxins in foods/feeds from one hand side and on the other hand studying their detrimental and sometimes even useful/medicinal effects in in vitro and in vivo models. Our results belong on mycotoxins including: Aflatoxin M1 in dairy products, Zearalenone and its effects on breast cancer cells and its biotransformation impacts, deoxynivalenol and its biological effects, cyclopiazonic acid in feed samples and its undesirable effects. Moreover, various studies were conducted to highlight the paraquat-induced injuries in rodent model and in cell culture model, too. Our findings strongly suggest that we need to establish and implement a strict, feasible regulatory system concerning food contaminants in our country.
