ﻫﺪف از اﻧﺠﺎم اﯾﻦ ﻣﻄﺎﻟﻌﻪ ﻣﻘﺎﯾﺴﻪ ارزش ﻏﺬاﯾﯽ ﺳﻪ ﮔﻮﻧﻪ ﻣﺎﻫﯽ ﮐﻔﺎل ﻃﻼﯾﯽ (Liza aurata)، اردك ﻣﺎﻫﯽ (Esox lucius) و )(Rutilus frisii kutum)ﻣﺎﻫﯽ ﺳﻔﯿﺪ در درﯾﺎي ﺧﺰر ﺑﻮد. در ﮐﻞ 30 ﻋﺪد از ﻫﺮ ﺳﻪ ﮔﻮﻧﻪ ﻣﺎﻫﯽ از ﺻﯿﺪﮔﺎه ﻫﺎي ﺧﺰر ﺟﻨﻮﺑﯽ ﺑﻪ ﺻﻮرت ﺗﺼﺎدﻓﯽ ﻧﻤﻮﻧﻪ ﺑﺮداري ﺷﺪ و ﺑﻪ ﺻﻮرت ﻣﻨﺠﻤﺪ ﺑﻪ آزﻣﺎﯾﺸﮕﺎه ﻣﻨﺘﻘﻞ ﮔﺮدﯾﺪ. ﭘﺲ از زﯾﺴﺖ ﺳﻨﺠﯽ، ﻣﯿﺰان ﭘﺮوﺗﺌﯿﻦ، ﭼﺮﺑﯽ، ﺧﺎﮐﺴﺘﺮ و رﻃﻮﺑﺖ اﯾﻦ ﻣﺎﻫﯿﺎن ﺑﺎ روشﻫﺎي آزﻣﺎﯾﺸﮕﺎﻫﯽ AOAC آزﻣﺎﯾﺶ ﺷﺪ. ﻣﯿﺰان ﭼﺮﺑﯽ، ﭘﺮوﺗﺌﯿﻦ، رﻃﻮﺑﺖ و ﺧﺎﮐﺴﺘﺮﮐﻞ ﻣﻮﺟﻮد در ﺑﺎﻓﺖ ﻧﺮم 3 ﮔﻮﻧﻪ ﻣﺎﻫﯽ ﻣﻮرد آزﻣﺎﯾﺶ ﺑﻪ ﺗﺮﺗﯿﺐ: ﻣﺎﻫﯽ ﮐﻔﺎل ﻃﻼﯾﯽ 3/11 ،74/81 ،22 ،2/70 در ﺻﺪ؛ اردك ﻣﺎﻫﯽ 1/11 ،78/4 ،22/03 ،4/92 و ماهي سفيد 3/57 ، 21/85، 76/38، 1/01درﺻﺪ ﻣﺤﺎﺳﺒﻪ ﮔﺮدﯾﺪ و راﺑﻄﻪ ﻣﻌﻨﯽ داري ﺑﯿﻦ آﻧﻬﺎ وﺟﻮد داﺷﺖ. ﻧﺘﺎﯾﺞ ﻧﺸﺎن داد ﮐﻪ ﺑﯿﺸــﺘﺮﯾﻦ درﺻــﺪ ﭼﺮﺑﯽ ﻣﺘﻌﻠﻖ ﺑﻪ اردك ﻣﺎﻫﯽ و ﺑﯿﺸــﺘﺮﯾﻦ ﭘﺮوﺗﺌﯿﻦ ﻣﺘﻌﻠﻖ ﺑﻪ اردك ﻣﺎﻫﯽ و ﮐﻔﺎل ﻃﻼﯾﯽ ﺑﻮد. در ﻧﻬﺎﯾﺖ ﻣﯽﺗﻮان ﺑﯿﺎن ﮐﺮد ﮐﻪ ﻫﺮ ﺳﻪ ﮔﻮﻧﻪ داراي ارزش ﺗﻐﺬﯾﻪاﯾﯽ ﺑﺎﻻ و ﺗﻔﺎوت اﻧﺪك در ﺗﺮﮐﯿﺒﺎت ﺑﯿﻮﺷﯿﻤﯿﺎﯾﯽ ﺑﺪن ﻫﺴﺘﻨﺪ.
چكيده لاتين :
This study was carried out on evaluating the nutritional value of 3 species golden grey mullet (Liza aurata), northern pike (Esox lucius), and kutum (Rutilus frisii kutum) in the Caspian Sea. Totally 30 specimens of 3 species were collected randomly in Caspian Sea’s prey stations. After sampling, specimens were frozen and transferred to the laboratory and biometric parameters measurements; protein, fat, ash and moisture contents of the fishes were analyzed using AOAC methods. The protein, fat, ash and moisture contents of 3 species golden grey mullet: 1.11, 22.1, 74.81, 2.70 present; northern pike: 4.92, 22.03, 78.4, 3.11 present; and common kilka: 3.57, 21.85, 76.38, 1.01 present respectively. Results showed that the highest fat contents in northern pike, the highest protein contents in northern pike and golden grey mullet, and it was significant.
