بررسي ويژگيهاي فيزيكوشيميايي ارقام گندم در منطقه غرب استان گلستان

Survey of physicochemical characteristics of wheat cultivars in western region of Golestan province

ارقام زيادي با ويژگيهاي مختلفي از گندم در سراسر جهان وجود دارد كه تركيبات هر واريته از ديگري متفاوت است. تغيير در تركيبات آرد حاصل از ارقام گندم بر روي خواص رئولوژي و كيفيت پخت تاثير مي گذارد. در اين پژوهش ويژگيهاي فيزيكوشيميايي ارقام گندم ( احسان، گنبد، مرواريد ولاين 17) كشت شده در منطقه غرب استان گلستان ( كردكوي و بندرتركمن تعيين شد. بدين منظور اين ارقام در خرداد ماه 1396 (فصل برداشت) از كشاورزان به مقدار يك كيلوگرم جمع آوري شد و رطوبت مطابق با روش استاندارد ملي ايران به شماره(2705)، خاكستر(2706)، گلوتن مرطوب به شماره (1-9639)، انديكس گلوتن به شماره (2-9639)، پروتئين مطابق روش ICC به شماره(1-150)، هكتوليتر با رطوبت سنج ويلي دويست و وزن هزار دانه اندازه گيري شد. نتايج نشان داد، لاين 17، احسان، گنبد و مرواريد به ترتيب بالاترين هكتوليتر، وزن هزار دانه، پروتئين و ايندكس گلوتن را داشت.

There are many varieties of different qualities of wheat around the world, each of which varies from one another. Changes in the composition of flour resulting from wheat cultivars affect rheological properties and baking quality.In this study, the physicochemical characteristics of wheat cultivars (Ehsan, Gonbad, Marvarid and Line 17) cultivating in the western region of Golestan province (Kordkoy and Bandar-Torkman) were determined. For this purpose, these cultivars collected from farmers in one kilogram in June And moisture in accordance with the National Iranian Standard Method (2705), ash (2706), wet gluten (no. 1-9639), gluten index (No. 9639), protein content according to ICC No. (1-150) hectoliter with wile200 moisture meter and a thousand grain weight. The results showed that Line 17, Ehsan, Gonbad and Morvarid had the highest hectoliters, thousand grain weight, protein and gluten index respectively.
