Abstract :
In this study, pineapple with 88% humidity (w.b) were dried different microwave powers and temperatures based on drying time until the humidity fell down to 7 % (w.b). Pineapples were dried on the microwave, combined microwave-convective and convective drying. Drying processes were completed with microwave powers (180, 360, 540, 720 and 900W), combined microwave powers (180, 360 and 540 W) and convective ((100, 150 and 200ºC) and only convective (100, 150 and 200ºC) based on drying time. Nine thin layers drying equations (Newton, Page, Henderson and Pabis, Logarithmic, Wang and Singh, Diffusion Approach, Two Term, Verma, Two Term exponential, Midilli-Kucuk) were compared with the collected data and the best model was found tobe Midilli-Kucuk model when comparing the correlation coefficient (R^2), standard error estimate(SEE) and residual sum of the square (RSS).
