  • Abstract
    Mozzarella cheese one of the most renowned Italian cheeses. Generally it is used with pizza production, in addition it is a delicious cheese that can be consumed freshly. Although it can be producted from mandate milk traditionally, with identified modifications it has been producted with cow milk but the cheese that has been producted with cow milk there is no characteristic taste and flavor. Because of being a tourism country and necessity of external rooted companies, mozzarella cheese from mandate milk caption is increasing day by day. Our country has a considerable mandate population and mandate milk production with this reason Afyon Kocatepe University Animal Research and Application Center is leading to provide the caption of mozzarella cheese. And it is a good reference making modern and hygienic mozzarella production.
