Determination of changes in quality during shelf-life in some broccoli cultivars
Abstract :
This study was carried out to determine the changes in quality during shelf-life periods in Maraton F1 and Tutku F1 broccoli cultivars by examining some parameters of the samples taken. Curd diameter, height, weight of broccoli cultivars were determined and broccoli curd were stored for shelf life in (20±1°C and 75±5% relative humidity (RH)) and (7±1°C ve 75±5% RH) for refrigerator condition. Weight loss, curd color (CIE L*, a*, b*), vitamin C, chlorophyll a, b ant total chlorophyll content were determined during shelf life. The chlorophyll a, b and total values of broccoli florets changed during storage at 200C, and there were significant differences in chlorophyll a values. Vitamin C values changed with the cultivars and shelf life duration. In both cultivars, the amount of Vitamin C decreased on the 1st day of the shelf life, increased on the 2nd day, and declined starting by the 3rd day of shelf life. The CIE colour values, namely a*, b* and C*, of broccoli florets stored at 70C changed with the storage duration, and different results obtained depending on the shelf life duration. The for marketing quality visible declined with the advancing shelf life period.
