Abstract :
In this study, the amounts of vitamin A, vitamin E and vitamin C in Rumex acetosella L. plant samples which are consumed densely were determined by using High Performance Liquid Chromatography. According to the obtained results, amounts of vitamin A, vitamin E and vitamin C in leaf of Rumex acetosella L. plants have been determined to be varied over the ranges of 4,12±0,79 – 12,84±2,20 μg/g; 14,93±2,90 – 27,20±3,40 μg/g and 206,70±19,50 – 268,8±24,2 μg/g respectively. It may be concluded from the results that, the Rumex acetosella L. reaches in terms of amount of vitamin A, vitamin E and vitamin C. Although the vitamin contents of the Rumex acetosella L. varies from the region to region.
