Abstract :
In Turkey, widely cultivated mahaleb plant are used in paint, cosmetics and bakery industry, are also used as a medicine by the public. In this study, some of the characteristic features of the white mahleb (Prunus mahaleb L.) that has a high export potential and economic value, and fatty acid composition of kernel oil were examined. Accordingly, nuclei fat content, protein content and 100-seed weight was determined 16.11±0.12%, 31.9297±0.437%, 3.835±0.016 g, respectively. Composition of fatty acids, conjugated linoleic acid (CLNA) 38.81%, 28.45% oleic acid (C18:1), linoleic acid (C18:2) 20.67%, palmitic acid (C16:0) 3.74%, stearic acid (C18:0) and 2.25% arachidic acid (C20:0) 0.3%, respectively.
