Abstract :
In this study, the fatty acid composition and ω3/ω6 fatty acid ratio was determined in muscle samples from 20 chub (Squalius cephalus L., 1758) in Serban Dam Lake on February 2010. The fatty acid composition was analyzed by GC (HP Agilent 7890 A) with FID detector, capillary column (DB-23) and supelco (37 mix) standard. Palmitic acid (PA,%19,374±0,631) and stearic acid (SA,%5,760±0,476) were the major SFA. Oleic acid (OA,%16,825±0710) and palmitoleic acid (PA, %13,601±0,371) were the major MUFA. Docosaheksaenoic acid (DHA, %10,449±1,562), arachidonic acid (AA, %7,338±0,558), eicosapentaenoic acid (EPA, %5,954±0,916), linoleic acid (LA, %4,558±0,440) and linolenic acid (LNA, %3,061±0,449) were the most abundant PUFA. The percentages of total SFA, total MUFA and total PUFA were found %28,414; %32,524; %38,197 of total lipid, respectively. These results have shown that there are significant statistical differences between fatty acid groups (P 0.05). The ω3/ω6 ratio in muscle tissues was found to be 1,285. S. cephalus is a significant dietary source of ω3 PUFA (especially DHA, EPA ve AA) for local people and ω3/ω6 ratio observed in the recommended values (1-4) in Serban Dam Lake.
