Abstract :
In this study, the amounts of vitamin A, vitamin E, Beta-carotene, vitamin C, thiamine hydrochloride (vitamin B1), riboflavin (vitamin B2), nicotinic acid (vitamin B3), pyridoxine hydrochloride (vitamin B6) and folic acid (vitamin B9) with reduced form glutathione (GSH) and oxidized form glutathione (GSSG) in the plant of which sold powdered spice turmeric (Curcuma longa L.) were determined by using High Performance Liquid Chromatography. In addition, total phenolic and flavonoid contents in plant content was determined by spectrophotometric measurements. Free radical scavenging effect of the plant extract on 2,2-diphenyl-1-pikrilhidrazil (DPPH) was measured and the results using the known standard antioxidant bütilhidroksitoluen (BHT) were compared. The amount of vitamin A, vitamin E, β-carotene, vitamin C, vitamin B1, vitamin B2, vitamin B3, vitamin B6, vitamin B9 with GSH and GSSG in leaves of Curcuma longa L. were obtained to be 10,79±1,09 µg/g; 14,88±6,80 µg/g; 30,89±3,23 µg/g; 46,93±3,68 µg/g; 28,81±2,52 µg/g; 0,73±0,09 µg/g; 17,92±2,12 µg/g; 5,40±0,95 µg/g; 33,07±0,20 µg/g; 73,45±11,31 µg/g and 287,10±36,99 µg/g respectively. The amount of total phenolic the as 187,02±5,22 (mg/g gallic acid equivalent) and the amount of the total flavanoid the 169,66±3,27 (mg/g quercetin equivalent) in samples were determined. Free radical scavenging effect of 85,32 ± 2,95 (%) was determined as, but compared to BHT was not significant difference (p 0.05). It may be concluded from the results that rich, the the Curcuma longa L. plant contains of vitamins A, E, C, glutathione (GSH, GSSG), vitamins B1, B3 and B9, also amount contains phenolic and flavonoid content a powerful antioxidant.
