Abstract
Total lipid and fatty acid composition in fish are affected by environmental condition (temparature and altitude etc.), physical, chemical and biological properties of water such as salinity, turbidity, pH, hardness, variety and density of phytoplankton and zooplankton. Success in fish breeding depend on both size and border of these changes and recognition and application of stress tolence of fish. Therefore, in this review, national and international literatures about relationships between fatty acids and stress tolerace in fish were searched and all details were given as much as possible.
