Goose in Cultural and Gastronomical Identity of Kars

Abstract
The definition of identity is a phenomenon that constitutes self-empathy, self-consciousness, and separates societies from each other. As regards the concept of identity, cultural identity is also influenced not only by traditions, customs, crafts and literature, but also by society at large and provides for the formation of food culture. All the qualities of communities that are decisive and distinctive in food cultures bring about the gastronomic identity of that community. Gastronomic identity evolves by cultural and environmental influences and is directly linked to these conditions. From this point of view, an element of cultural identity is also an element of direct gastronomic identity. The province of Kars, which has hosted many gatherings throughout history with its strategic position, carries examples of this matter. In this research which is made by using descriptive analysis, in depth content analysis and interview technique of qualitative research techniques, the place of cultural and gastronomic identity of Kars province, which has an important place in Turkish culture and mythology, was investigated. As a result of the research, it has been determined that goose is a part of cultural identities in many ways, from adjectives attributed to persons from the formation of social roles to handicrafts to literary works. In addition, Kars province has found its place in the gastronomic identity as much as it will come to mind when mentioning many meals made from goose meat such as goose pilaf. It is another result of the research that the goose cultures that stand out with its economic value are extremely important for the province and that it is a heritage that must be transferred from generation to generation. In this context, it is important that these cultures do not disappear with the measures to be taken.
