Abstract
In scope of this study, phytochemical and anti-microbial changes that occur due to altitude change in the fruits of Angeleno plum variety were targeted. For this purpose, analyzes were conducted by sampling the fruits of the Angeleno plum variety that are harvested from two different locations within the borders of Eskişehir. According to the obtained results, increase in phenolic compounds was determined with the increase of altitude, while organic acids and anti-microbial effects were decreased. While the ranking of organic acids was found as malic acid acetic acid oxalic acid ascorbic acid in both altitudes, stable ranking could not be observed in phenolic acids. Anti-fungal and anti-bacterial effects of routine were detected at a high level among the phenolic compounds. Same effect was found for malic acid, oxalic acid and ascorbic acid among the organic acids.
