This article discusses the many challenges and possibilities in the snack food manufacturing industry, while illustrating the benefits of crossing discipline borders to benefit from and contribute toward cross-fertilization of ideas. In particular, this paper emphasizes on process monitoring and control solutions as well as the challenges of salty snack food processes
