Abstract :
Public perception of what constitutes a healthy or high-quality product is leading manufacturers to exploit alternative processes and presentation. As a result, aseptically processed foods, which are cooked prior to packaging, are appearing in the shops. This article reviews the development of a novel electrical cooking process targeted for the modern aseptic process line
