  • Abstract
    Control of the supply chain uncertainty is a hot issue studied by scholars at home and abroad, with the increasing importance of service elements, service supply chain has gradually become a new topic of supply chain management. Because of the intangibility, perishability nature of services and customer-participationed character of service supply chain, service supply chain uncertainty is different from traditional supply chain. In this paper, catering industry as the industry background, discuss the features of catering service supply chain uncertainty, and based on the features and collaborative process propose the corresponding control strategy. Through interviews of catering industry relevant departments, design a control scheme which service integration is considered as the centre, with order and dishes standard confirmation as content.
