Abstract :
The industry of Chinese low-alcoholic fruit wine, especially wine, has developed quickly in recent years, and has achieved great achievements in terms of wine quality. But some quality control measures of fruit wine, such as apricot wine, have to be made in order to compete in the international market. Quality control of apricot fermentation wine is very important in every processing stage from apricot treatment to apricot wine bottling. In order to obtain high-quality apricot wine, the concept of quality control must be set up. This paper analyzes various quality factors in apricot winemaking, including raw material treatment, maceration fermentation process, press, post-fermentation, malolactic fermentation and storage management. Based on these aspects, the author of this paper makes the most significantly critical control points for high-quality quality wine and proposes the quality control measures.
