Abstract
NIR spectroscopy can be used to measure the amylose content in rough rice, brown rice and milled rice. From the investigation in this research, if the amylose content is high in the rice, the rate of digestion, glucose absorption is slow and it can reduce insulin responses. So, diabetics patient can start practice to have a proper diet by choosing rice with high amylose content such us Basmati rice and brown rice.
