In this paper, soy isoflavones as raw material, the use of acid hydrolysis of cellulose daidzein, soybean isoflavones by HPLC method and daidzein content of the orthogonal design, the system of the substrate concentration, enzyme concentration, conversion time on the soybean isoflavone daidzein into effect, the best single-factor test verification transformation temperature, pH, to determine the optimal conditions.
