Abstract :
In this paper, hot air drying characteristics of litchi pulp was studied. Effects of size, maturity, hot-air temperature and air velocity on hot air drying characteristics of litchi pulp were compared. Drying kinetic models of litchi pulp were also investigated. The results showed that the drying rates of litchi pulp were markedly affected by hot air temperature. The Two-term model fitted the experimental data best and could exactly describe and predict the moisture dynamics of litchi pulp during hot air drying process.
